Smoked Lamb Lollipops
The Smoked Lamb Lollipops by @michigan_bbq_addicts uses a rack of Australian lamb to create the delicious, savory-looking and delectable smoked lollipops.
A rack of lamb is basically the meat chunk that's sliced perpendicular to the spine and usually includes the 8 ribs on one side. In retail, the meat is usually referred to as "double rack of lamb" when selling the meat chunk with the ribs on both sides.
Trim some fat off a 2lbs rack of Australian lamb and hit it with olive oil as binder. Put an even coating of some seasoning of your choice such as the Meat Church Holy Gospel Rub to both sides of the rack.Â
 Cover the bones with tinfoil for presentation.
 Smoke over cherry wood at 250 degrees F for 1-2 hours until the meat reaches an internal temperature of 130 degrees.
Meanwhile, on the side box with a cast iron, melt some butter and add in shallots, 3 garlic cloves and sprigs of thyme. Throw in the lamb and sear 2-3 minutes on each side. Baste it with the butter mixture.
